We source all local Scottish Borders beef, lamb, pork and sea food all from the local area. Fresh fruit and vegetables come from local growers where ever possible, depending on the season. We also source the finest exotic ingredients from around the world. We also use according to the season - wild pheasant, duck, venison, salmon and partridge, this adds to the local Scottish flavour of our menu.
